For some reason the p-nut crop is late in my area.....As far as recipes and cooking them, I have tried a guber bout any way a cracker can try em....My favorite way is to cook them in an old black kettle or pot. I have an old pot that goes to my old fish cooker, and I slow cook them outside over an oak fire...I don't do them all like that, just mainly when I have the time. Something different to try, Get pack of meatloaf seasoning and mix that with your salt and whatever seasoning you choose and boil them down.....

C1, I'm kinda like that too .... I've never met a goober, tater, or bean I didn't like. Some are
better than others, but they're all OK by me.

there is 2 places north of ocala, waldron and silar. they are the king pins of the green pnut market, if ya get them in a grocery store they probally come from one of them. when cooking pnuts boil till they're tender then soak. longer the better.

Waldron there at Citra has always been fair with me, and their peanuts are usually clean and good quality.

Hey y'all .... just found something you might like. In the produce section over at Publics they have some two pound bags of boiled peanuts from a company that calls themselves Hardy Farms. They're in a green bag, and I think they're pretty good to be so handy. If you're wanting to boil up a few for the Nascar on Sunday, or to take to the camp, they're not bad ...... clean and decent size, and they're American grown.
I boiled up a pot for about an hour additional this morning (I like em tender) with a little more salt and a little Cholula and they're not bad at all. The bag says they're made from green peanuts too, and I think that's probably right.

Hugh, I was really impressed with them ...... they'd be pricey if you wanted to boil them up to sell, but the quality of the bags we bought was real good. A two pound bag can be ready in a jiffy, and it's a nice batch for most occasions. I'm gonna try a bag in the crock pot next.

Waldron or Silers sells bushels of peanuts just add 2 boxes of salt cook and let sit about an hour, bag'em and freeze.

The last batch I tried of those Hardy Farms peanuts I did 'em in the crock pot ..... all night on 'low' and a lot more salt like Dudley said. Perfect.

I like to get mine here locally when fresh dug, before they've had a chance to dry completely. Buy them right of the farm cart or already cleaned. Got spoiled when we lived up in Chipley, my neighbor would let us know when he'd be turning the first row alongside our pasture, and would let the families in the area have at it.

My favorite recipe is simple.... SALT, fresh garlic, and Datil Peppers (or sauce) and using a Pressure Cooker !!!

Diamond Jim, you could probably use fresh Datil peppers for snack food. I can't do it, bro. Our son can go into a wing house, order the hottest thing on the menu, and then dump about a half bottle of hot sauce on top of that before he eats. I'll tell ya' quick .... I ain't tough enough to run with you boys!!
