Dudley's Pickled Squash

Dudley's Pickled Squash

Dudley came over for Thanksgiving and brought these. He always tells us he's gonna make somebody a good wife someday and after eating his cooking, I believe him...these things are delicious:

Ingredients:
10 cups sliced squash
2 bell peppers (1 red/1 green) cut in 1/4 and sliced
2 cups sliced sweet onions (Moderated at Dudley's direction, Scotty) :lol:
1/4 tsp crushed red pepper

Brine:
2 cups white vinegar
3 cups sugar
2 tbs mustard seed
2 tsp celery seed

Directions:
Put squash, bell peppers, onions, crushed red pepper in a large bowl of ice water and let stand for 1 1/2 hours.
Bring brine to a boil for 1 minute.
Drain squash and place in the brine.
Bring brine and squash back to a boil.
Remove from heat and pack in jars.

Nothin' wrong with squash that a little RoundUp won't fix. :?

there ain't much better that fried squash , zucchini and onion W/minced garlic . MMMMMMMM

Sberryman, I was tryin' to tease Dudley but I couldn't get a rise out of the little feller. I'd always eaten squash sliced and fried like green tomaters, but this sounds excellent. I'll have to try it.

For those of you that don't know, Dudley (in addition to bein' the official SA stud) is a pretty fine cook. Maybe that's why the women are so hot after him ..... cookin' lessons! :lol:

What I wanna know is how long this has to set before ya can eat it?

Soonz I know what I'm up against time wise I'll be making a dozen or so jars.

Everybody has their own tastes. Squash has never been very high on my list of favorites.

My Mom made a squash casserole that I could eat, but it never was something that I loved.

The first wife loved stewed squash, 'matters, and onions. (she got the recipe from my Mom) I wouldn't eat that, because it just tasted nasty to me. Others loved it though, and is a favorite among my kids. I LIKE stewed 'matters and onions, but don't care for the squash.

Now, pickled squash may have a possibility. I'll have to try it.

Well I made the recipe tonight and it filled 5 pint Mason Jars. Lord knows I way over estimated how much stuff I would need. So I am going to make another batch tomorrow. The rest of the squash Ill bust fry up like most folks do egg plant. Love my fried squash.

Nobody still hasn't said how long it takes for the juices to make pickles though? These jars have to sit for 6 months or something before they are pickles?

if I remember right it's only about 2 1/2 months for sealed skin (like pickles) SLICED cures a lot faster ! seems like 6 to maybe 8 weeks at the most

That's kinda what I was thinkin', Bear ..... at least a couple of months, and then after that the longer the better. They might be pretty tasty with a ribeye long about the 4th of July. I wish Dudley would post up on this. He's the man that started all this racket in the 1st place!

You can start eating the pickles the next day after they are good and cold. I hope y'all enjoy them as much as I do.

Dudley somehow my danged phone got turned off today. I missed a bunch of calls including yours. Sorry man, just one them things I hate about cell phones.

Where can I find canning jars? I tried Walmart, Winn-Dixie, Tractor Supply, Dollar General, Home Depot, And Lowes.
